Anasazi Bean Seeds

The Anasazi Bean, also known as The Orca Bean, Yin Yang Bean Jacob's Cattle Bean, Trout Bean, Dalmation Bean or Coach Dog Bean is estimated to have been in existence for more than 1,200 years! They are actually believed to be a close relative of the original bean, which is thought to have stopped germinating hundreds of years ago. This bean has recently gained popularity for its striking colors and rich history.

This traditional, ancient bean is in high demand by those wishing to create authentic Latin and Native American cuisines. Anasazi beans are small kidney shaped purple and white beans in the same family as pinto beans. They can be used in Latin American and Southwestern cuisines, and have a mild, sweet flavor. In any recipe which calls for Pinto beans, Anasazi beans can be used as a replacement. They can also be used as re-fried beans, or combined with other beans for rich bean soups and stews. These beans are also marketed as New Mexico cave beans, Aztec beans, New Mexico appaloosas, and Jacob's Cattle beans.

Like most beans, the Anasazi bean is very high in protein, fiber and starch. This bean is moderately drought resistant.
