Italian Heirloom Tabouli:

- 1 C. Bulgur wheat
- 1 1/2 C. boiling water
- 1 t. Sea salt
- 1/4 C. Fresh lemon juice
- 1/4 C. Olive oil
- 1 Clove garlic, minced
- 1 Large Italian Heirloom Tomato , diced (large pieces)
- 1 Cucumber, sliced in half moons
- 3 C. Fresh Italian Parsley, chopped
- 4 Green onions, chopped with tops
- Optional additions: fresh mint, chopped; fresh mushrooms, sliced; sweet pepper, diced; radishes, sliced; bean sprouts; hard cooked eggs, chopped; celery, diced; carrots, sliced in thin rounds
- Pour boiling over wheat. Cover and let sit for 30 minutes
- Stir salt, lemon juice, olive oil and garlic together
- Add lemon juice mixture into wheat and allow to cool
- Add remaining ingredients and desired optional ingredients just before serving.
- Tabbouli may be served cold or at room temperature. It's also great stuffed in a tomato or pepper
