Five Color Silverbeet Chard (aka Rainbow Chard, Bright lights Chard) originated in Australia. This Chard was offered through Thompson; Morgan from 1970 through 1980. The product was dropped and appeared to vanish from the American market after a few of the colors began to decrease.

After years of searching, a vibrant and true 5 color variety (pink, yellow, orange, red and white) again became available in the US after it was re-discovered in Australia.

The Five Color Silverbeet Chard greens have a buttery texture and a mild, sweet taste. They can be substituted for spinach in any recipe. The stems can be cooked or eaten raw. like celery.

This chard provides a delicious, nutritious and beautiful addition to your vegetable or flower garden.

Recipe for Fresh Swiss Chard (or Red Russian Kale) and Olive Oil:

• 2 Tbs. Olive Oil
• 1 Clove Garlic, minced
• 1 Shallot, sliced
• 1 Large bunch (approx 2-3 Cups) Red Russian Kale or Swiss Chard- washed, dried and chopped into 2in. chunks.
• Salt and Pepper to taste

1. Coat bottom of saute' pan with olive oil.
2. Add garlic and shallot. Heat slowly.
3. When hot, add Red Russian Kale or Swiss Chard
4. Stir fry for 2-5 minutes
5. Salt and Pepper to taste.
6. Serve immediately as a bed for your entree or other vegetables
