Scarlet Keeper Carrot Seeds
The Scarlet Keeper Carrot is a popular heirloom carrot known for its broad shoulders and great storage qualities. This carrot variety is said to be the finest storage carrot available! Scarlet Keepers are also ideal for juicing and freezing.
These dark orange carrots grow to 7-10" long and taper slightly to a blunt tip. Scarlet Keepers have been selected for a superior uniformity and vigor.

Recipe for Roasted Whole Carrots with Rosemary and Honey:

- 2 lbs Carrots, as many colors as possible
- ¼ cup extra-virgin olive oil
- 2 tsp kosher salt
- 1 tsp freshly ground black pepper
- 2 to 4 Tbs honey
- 3 tsp finely chopped fresh rosemary
- Preheat oven to 425°F. Line baking pan with foil.
- Cut all but ¼-inch of greens off of the carrots. Thoroughly scrub the carrots (peel if you wish, but they have a more rustic look with the skins left on).
- Arrange the carrots in a single layer on prepared baking sheet. Drizzle with oil and roll to coat.
- Place in the oven to roast until tender when pierced with a knife, 15 to 20 minutes.
- Remove from oven and season generously with salt and pepper.
- Drizzle with honey and sprinkle with rosemary.
- Serve warm or at room temperature.

Companion Plants for Carrots: These plants will grow well with Carrots- Tomatoes - Tomatoes grow better with Carrots but may stunt the Carrots growth
- Beans- (Bad for Tomatoes) Provide nitrogen to Carrots more than some other vegetables
- Allium (onion, chives, leeks etc)- Inter-plant with Carrots to confuse onion and carrot flies.
- Sage, Rosemary and Radishes - Listed controversially as companion plants. Some say they are beneficial some say they are incompatible.
