Serrano Chili Pepper Seeds
The meaty, hot and very versatile Serrano Chili Peppers originated in the Mexican states of Puebla and Hidalgo. They are now very common in the Southwestern United States and in Thai cuisine.
Serrano Peppers are in the top 10 hottest peppers on the market. They are said to be 5 times hotter than the Jalapeno Pepper.
Serrano Chili peppershave very thin walls so they do not need to be steamed or peeled before using. This makes these peppers the easiest to use in salsas. They are also common in sauces, relishes, as garnishes and roasted. Serrano Peppers are very meaty and, therefore, do not dry well.
Serrano Peppers are initially green and change to red, brown, orange or yellow as they mature.

Recipe for Black Been and Cheese Enchiladas:

Sauce Mix:
- 6 Tbs. Olive oil
- 2 Tbs. Chili powder
- 4 Tbs Whole wheat flour
- 4 Cups Water
- 2 tsp. vinegar
- 1 tsp. garlic powder
- 1 tsp. crushed Fresh Oregano.
- 1 tsp. Salt
- Stir all ingredients together.
- Slowly bring to a boil, turn down and simmer for 5 minutes.
Bean Filling and Enchilada prep:
- 2 Cups cooked black beans (can used canned ones just rinse and drain them prior).
- 1 Med white onion chopped.
- 1 chopped Serrano Chili Pepper or Jalapeno Chili Pepper
- 1 Tbs oil
- 16 oz about grated Sharp cheddar cheese
- 1 Dozen Corn Tortillas
- Add chopped onion and green chili to oil and cook untill tender.
- Add beans, mix well.
- Add about ½ cup of sauce mix and stir well
- Dip tortillas in the boiling hot sauce to make them tender and easy to roll up
- Add a scoop of bean mixture and touch of cheese to each tortilla and roll up in a 9x13 or larger pan.
- Sprinkle with cheese
- Bake uncovered for 30 min or until cheese is melted and enchiladas are bubbly
- Serve with sour cream, guacamole and your favorite toppings. Enjoy!
