Yellow Mustard
seed is the most commonly used mustard seed. It has a sharp, pungent flavor, due to mixing the seed with cold liquid. This causes the release of the enzyme myrosinase, responsible for mustard's characteristic heat.
Homemade mustards are often hotter and more intensely flavored than the commercial preparations you can buy.
To make your own mustard: Mix the whole, ground, cracked, or bruised mustard seeds with water, vinegar or other liquids. You can add any other flavorings and spices of your choice. Mix until you have created a thick paste.
The whole seed can be used in soups and for pickling.
